PINK
Pink is the colour of our wine, and so the label is a ‘taste’ of it. Pink is the colour par excellence of delicacy and charm, beauty and refinement. This is how our Tresette wants to establish itself: beautiful in its packaging, delicate in its bubbles, charming in its aroma and refined in its taste.
WHY WE LIKE
Tresette represents the challenge of using native varieties to create a 100% Metodo Classico from the production area. The vineyards are located above 400 metres above sea level, which is an ideal terroir for creating this innovative sparkling wine.
TECHNICAL SPECIFICATIONS
- Harvest : hand picked.
- Vinification : The harvest begins each year with the picking of the grapes for Tresette. The grapes are pressed whole without destemming or crushing, resulting in a lower yield but higher quality. Fermentation at low temperature and ageing on the lees for 6 months are the steps that precede the second fermentation, which generally takes place around May of the year following the harvest. It rests in the bottle and ages for 60 months or more before being prepared for sale.
- Colour : onion skin pink with subtle golden reflections. The bubbles are fine and create small, persistent chains.
- Aroma : The aroma is what distinguishes it from traditional Pinot-Chardonnay sparkling wines. Native Piedmontese grapes have a more pronounced aromatic note, which we find here in the form of notes of cherry, pear, jasmine, wisteria and honey, together with bread crust and caramel.
- Taste : Creamy bubbles in the mouth and easy to drink, the still vibrant acidity makes it savoury, fresh and persistent, yet the long ageing on the lees intensifies its body and aroma.
SERVICE AND FOOD PAIRINGS
Serve chilled, at around 10°C. We recommend uncorking the bottle gently so as not to lose the creaminess of the bubbles. Perfect with raw fish or risottos creamed with butter.
