Langhe Nebbiolo D.O.C. - 2019
BLACK:
Black is synonymous with class and elegance. These are the main characteristics of our Nebbiolo, which aims at balance and finesse on the palate in order to never tire. The label is also a deliberate representation of the first autumn mists, typical of the harvest period for this variety.
WHY WE LIKE
Nebbiolo has always represented the most classic of Piedmont's traditions. A difficult variety, not easy to cultivate but which, if treated with grace and respect, gives great satisfaction. It is probably the grape variety that best represents our Piedmontese character.
TECHNICAL SPECIFICATIONS
- Variety : 100% Nebbiolo.
- Harvest : hand picked on the hills in Cossano Belbo.

Vinification : The harvest takes place in the last ten days of October. The grapes are thinned out 3 times in August to obtain only the best quality. Once in the cellar, the grapes are destemmed and crushed, followed by fermentation in stainless steel tanks. At the end of fermentation, the marc cap is removed to make a submerged cap that will last for about a month. The wine then goes into French oak tonneaux where it rests for two years. Once in the bottle, it rests for another year before release.

Colour : Garnet red with orange highlights.

Aroma : Characteristic varietal: raspberry, violet and currant but also peach and apricot. Slight vanilla notes from the wood that do not cover the primary aromas.
- Taste : Soft, silky tannin and well-balanced acidity. Not excessively alcoholic, it is very persistent at the end of the mouth.
SERVICE AND FOOD PAIRINGS
It is recommended to serve at a temperature of 18°C and to decant it, if possible, for about one hour before serving. This Langhe Nebbiolo gives its best with refined but not exaggeratedly concentrated dishes. A beef tartare with truffle is a classic, but it is also an excellent accompaniment to alpine cheeses and red meats.
